Wine production methods: | Destemming with light crushing of the grape. Fermentation with indigenous yeasts after preparation of a pied de cuve. Maceration in small vats with manual punching down at controlled temperature for 15 – 18 days. Ageing in French oak barrels for about 18 months. In bottles for at least 10 months |
